Is there a reason we cannot edit rosters? I know I can add people to them .. but I can't for the life of me figure out how to remove members from a roster.

It's matter of going to Admin > Rosters, click [Members], then click [Edit].

You'll see the checkboxes for Rosters there. Uncheck the appropriate roster and you're good to go.

Speaking of rosters, it seems as though if i party up with people and or raid with them, the Character Edit Screen is picking them up, but not showing on the rosters, why is this.

I'm not sure I understand what you're asking here. The character edit screen picks up what? Are you referring to uploading GRSS snapshots? That part merely imports the characters out of necessity, but it doesn't add characters to rosters.
