I updated a raid, and it went ahead and credited those raiders with DKP, but I wanted it for historical value, and item drops. How do I zero out the DKP, or just remove that raid from the dkp set?

You can do an adjustment
Or I believe you can go to the raid and set the points to zero.

I have adjusted, and now I show earned and spent of 2. current of 12.

I have removed the raids as best I can find. However these two fields still have values.

That looks like you have EPGP enabled. Edit the DKP System and uncheck the box for "Total is determined by dividing earned by spent (for EPGP)"
