Is there a feature on DKPsystems that allows the officers to view the log/history of requested items..such as status, whom it was requested by, whom delivered/approved it, etc...?

At the moment no, but now that the logging mechanism is completed with the event signup process, adding the logging elsewhere is possible. It's a matter of us just adding the coding.
As for a mod to work with the system in regards to the Guild Bank stuff (I'm assuming), the DKPProfiler has GuildBank functionality built into it (its original name was actually the "GuildBank" mod).

We are using DKPProfiler built-in GuildBank functionality and our members are able to request items using it. However, there isn't seem to be anything that keeps track of requests and/or status of requests. It would be very helpful to have request log or something so we are able to manage requests better on the site.
