Is there an easy way to make the [All] option go away (for most users at least) in the Forums Thread Interface.

In case you ask why, I have two guilds on the site now (WoW and LotR) and I would like to "force" users to keep them separate.

I'm afraid not. If you want them to force it separate, have them use the Advanced Filter.
